Are subdomains indexed as separate domains?

I've heard that subdomains are classed as separate domains by the search engines. So you can have cars.domain.com and food.domain.com, and then target totally different keywords for each subdomain. Is this right?

I think that Google considers them all the same thing these days and treats subdomains like directories.
